Banana, Fig & Walnut Loaf


This is such a nice loaf to make and is good any time of the day. I love it for breakfast toasted, my Chris likes it after dinner with a bit of icecream.... enjoy! It's from the Forks over Knives app - one I use a lot.


Ingredients:

  • 4 ripe bananas

  • 1/2 cup plant-based milk

  • 4 tsp apple cider vinegar

  • 4 tsp pure vanilla extract

  • 2 cups whole meal plain flour

  • 1/4 cup raw sugar

  • 1 tbsp baking powder

  • 1/8 tsp sea salt

  • 1/2 cup chopped dried figs

  • 1/4 cup chopped walnuts


Method:

  1. Preheat oven to 180 degrees C. Line a loaf tin with baking paper.

  2. In a medium bowl mash bananas with a fork. Stir in the milk, vinegar and vanilla.

  3. In a large bowl stir together flour, sugar, baking powder and salt. Add banana mixture all at once to flour mixture. Stir just until moistened (loaf mix should be lumpy). Fold in the figs and walnuts.

  4. Pour loaf mix into the prepared loaf tin. Bake for 1 hour or until a skewer inserted in the centre comes out clean. Cool in the tin on a wire rack for 10 minutes. Remove from the tin, cool completely on rack.
