Mediterranean Risoni

I found this all natural recipe base at the supermarket by SIMPLY WHOLESOME PANTRY - Mediterranean... and it is such as easy go to and super delicious. I choose to make mine veggie so can add in some chickpeas and plant based cheese etc...


Ingredients:

  • 4 small chicken breasts

  • 1 brown onion, finely diced

  • 2 cloves garlic, finely chopped

  • 1 large zucchini, chopped

  • 400g tin tomatoes or 2 large tomatoes, diced

  • 1 cup risoni

  • 2½ cups vegetable stock

  • 2 cups baby spinach

  • 100g feta cheese, crumbled


Method:

  1. Season chicken with salt and pepper. Heat 1 tbsp oil in large pot/pan on medium heat. Cook chicken breasts each side until just cooked through. Remove and set aside.

  2. Add 1 tbsp oil to pan. Cook onion and garlic for 2-3 minutes. Add zucchini and tomatoes and cook for 2 minutes.

  3. Add SIMPLY WHOLESOME PANTRY recipe base, risoni and stock. Stir through and let simmer uncovered for 10 minutes until pasta is cooked. Stir through spinach. Place chicken back into the pan and warm through. Crumble over feta and garnish with herb of choice.
