Mexican Bake

This is from the Woolworths recipe library but I've tweaked it a bit. It was very very yummy!
Ingredients:
3 tbsp Olive Oil
450g Sweet Potato, peeled, cut into small cubes
420g Black Beans, drained
400g cooked brown basmati rice
1 Cup canned corn, drained
60g Ranch Dressing (I made my own using mayo, sour cream, oat milk, lemon, and lots of herbs)
250g Chunky Salsa
250g Grated Cheese - I used a plant-based cheese
Method:
Preheat the oven to 190°C.
Heat a cast iron pan to medium high and add the oil and saute the sweet potato until cooked (about 10 minutes).
Take off the heat, stir in the rice, beans, corn, ranch dressing and salsa and mix well. Top with cheese and bake for 12-15 minutes or until the cheese is melted and golden.
I love recipes that are one pot wonders and this is along those lines for me. A few steps but it all comes together at the end as one.
