Sammi's Lunch Time Salad


I'm going to list all of the ingredients that I use and then you can determine what you want to add in/remove etc...


Ingredients:

Kale/Baby Spinach/Rocket

Cos Lettuce

Herbs - mint, parsley, basil

Mushrooms

Carrot

Cucumber

Tomatoes

Capsicum

Red Onion/spring onion

1 tbspn flaxmeal/hemp seeds

1 tbspn nutritional yeast

1 tbspn pepitas

1 tbspn sunflower seeds

Chilli Red Kidney Beans or other legume

1 tspn olive oil

1 tspn apple cider vinegar/balsamic vinegar

1 tspn dijon mustard/tahini

1 tbspn hommus


I build it and then I just toss it all together. I also add some cooked brown rice/quinoa/couscous or have it with a slice of pumpkin rye bread spread with tahini as well. I don't have the grain part every day as it all depends on what I'm having for dinner.


Bon appetite... it's a lovely crisp, fresh salad that my body just loves to eat!
