Slow Cooker Yellow Veggie Curry

Ingredients:
lemongrass - 1 stalk peeled and sliced or 1 tbsp of minded or from a jar
2 cloves of garlic minced
3cm piece of ginger minced
2 tbsp fish sauce
1 cup stock
1/3 cup yellow curry paste
400ml coconut cream/milk
2 bay leaves
2-3 sweet potatoes peeled and cubed
2 carrots thickly sliced
2 white potatoes peeled and cubed
1 lge zucchini thickly sliced
shallots fresh
shallots fried
Method:
Put all ingredients into your slow cooker in any order, stir and cook on low for 7-8 hours.
Serve with rice, noodles, pappadums etc and any fresh veggies of choice. Garnish with fresh and fried shallots.
