Stewed Rhubarb

This is so delicious with porridge, overnight oats, wholemeal date scones.... and was one of my all-time favourites as a child.
Ingredients:
3 cups rhubarb
½ cup raw sugar
1 tbsp water
1/8 tsp cinnamon (optional)
Method:
Chop up the rhubarb into 1-inch pieces and be mindful of the leaves (these need to be discarded carefully as they are toxic). Place the chopped rhubarb in a saucepan with the sugar, water and cinnamon. Put the lid on and bring to a simmer for 15 minutes or until the rhubarb is soft and stringy.
