Toasted Muesli

This muesli recipe is one that I would love you to make it your own. Add your own favourites or try adding something new. And when cooking this please know your oven. The temperature and cooking time is trial and error so maybe start with a less temperature say 150°C for 30 minutes and then check. It will continue to cook as it cools down as well.


Ingredients:

  • 8 cups of organic rolled oats

  • ½ cup roughly chopped almonds

  • ¼ cup roughly chopped macadamias

  • ¼ cup pepitas

  • ¼ cup sunflower seeds

  • ½ cup roughly chopped walnuts

  • 2 tbsp chia seeds

  • ½ cup dried fruit - apricots/cranberries/blueberries

  • 1 tbsp coconut oil

  • 2 tbsp maple syrup

  • ½ tsp vanilla extract

  • 1 tsp ground cinnamon


Method:

  1. Preheat oven to 180°C and combine all of the first 7 ingredients into a large bowl.

  2. Set the dried fruit aside (I find this works better to add in after it is cooked).

  3. Melt the coconut oil in a small pan over a low heat and then add the maple, vanilla and cinnamon.

  4. Pour the oil mixture into the bowl with the dry ingredients and stir well to coat.

  5. Spread this mixture onto two baking trays and bake for 30 minutes, turning every 10 minutes to prevent burning.

  6. Let it cool, then toss in the dried fruit and pop in to an airtight jar. You can also store this in the fridge as well.
