Veggie Burgers

Now my picture isn't the greatest but it's definitely my amateur photography skills at play here LOL! Don't let this deter you from making these as they are really delicious. Play around with herbs and spices too. I love making a green burger and this recipe is an inspiration from a few recipes I have found.
Ingredients:
½ cup frozen peas
2 cups baby spinach
2 cloves of garlic
2 spring onions
1 cup of chickpeas, drained and rinsed
2/3 cup cooked brown rice - cooled
¼ cup fresh mint
¼ cup fresh coriander or herbs of choice
1 lemon zest only
1 tsp salt
10 whole black peppercorns
1 tbsp oil for frying
Method:
Add the frozen peas to a bowl and cover with boiling water and leave for 10 minutes.
Add the spinach to a food processor and pulse on and off for 10 seconds or until spinach is finely chopped.
Drain the peas and add them to the processor along with the rest of the ingredients except the oil.
Pulse until the mixture comes together. You will need to stop and scrape down the sides. The mixture should stick together between your fingers but still have texture.
Shape the mix into patties about the size of your palm and place them onto a plate and refrigerate of 20 minutes.
Heat the oil in a pan over medium heat. Grill each pattie for 4-5 minutes on one side before gently flipping to cook the other side and continue until patties are cooked.
Serve with a lemon mayonnaise and your favourite roll/wrap/salad etc.
